YIELD: about 30 biscuits PREP TIME: 10 minnutes COOK TIME: 10 minutes

1/2 cup unsalted butterat room temperature

1 cup packed light brown sugar

1 large egg

1 1/2 tsp pure vanilla extract

1 cup all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

2 tsp ground cinnamon

3 1/4 cup old fashioned oats

1 cup semi-sweet chocolate chips

Scrape down the sides of the bowl and then mix in the egg until fully incorporated. Scrape the sides of the bowl again and add the skillet and vanilla.

Gently add the bread mixture to the banana mixture and mix until just blended.

Scrape the sides of the bowl and then stir to recombine.

Use a moderate cookie scoop (about 1.5 tbsp ) to scoop the dough onto prepared cookie sheets leaving about two inches between each cookie.

Bake in preheated oven for about 9-11 minutes.

Remove cookies from the oven and lightly press on the tops of each cookie with the bottom of a drinking glass. Considering these cookies do not spread considerably, this will give them a conventional cookie shape.

Permit the banana oatmeal cookies to cool on the cookie sheets for 5 minutes before removing them to a wire rack to cool thoroughly.
